The first thing you notice about this royal Rajasthani dish is the fiery red chillies — but don’t be deceived into thinking it’s merely a gustatory inferno. The best laal maas uses punchy, aromatic Mathania chillies, which act as a flavourful veil over the meat.

For some of the best laal maas, head to the lakeside restaurant at Amet Haveli in Udaipur or sample the Maharaja of Jodhpur’s family recipe at Pillars on the terrace of the art deco Umaid Bhawan Palace.
